Holiday Crepe Cake With Orange Frosting
Light, delicate layers of crepes stacked tall and filled with a bright, citrusy cream cheese frosting make this cake a showstopper. It’s festive, flavorful, and surprisingly simple to make at home!
Crepe Ingredients:
½ cup water
1 cup milk
4 eggs
¼ cup melted butter
2 tbsp sugar
1 cup flour
Pinch of salt
Frosting Ingredients:
1 cup (2 sticks) softened butter
14 oz (1 can) sweetened condensed milk
8 oz softened cream cheese
2 tsp vanilla extract
Zest from 2 oranges
Crepe Method:
Add all crepe ingredients to a blender. Stir slightly with a rubber spatula, and then run the blender until all ingredients are smooth and a batter forms. Scrape down the sides of the blender and re-blend as needed to ensure that all dry ingredients are incorporated. Set aside.
Heat a non-stick skillet over medium heat. Once hot, spray a small amount of pan spray onto the surface. Ladle in the crepe batter and swirl the pan until the batter reaches the edges of the bottom of the pan.
Cook crepe until the edges start to brown, about 15-30 seconds. Flip the crepe and cook for another few seconds.
Remove the crepe to a cooling rack and continue the process until all the batter has been used. You should have about 15 crepes total.
Spread all crepes out on a cooling rack and allow to cool to room temperature. Be careful not to stack hot crepes on top of one another.
Frosting Method:
In the bowl of a stand mixer with a whip attachment, or with a hand mixer, combine the softened butter and sweetened condensed milk. Run the machine slowly to start, then increase to high for 7 minutes.
Add the softened cream cheese, vanilla, and orange zest. Whip an additional 3 minutes.
Assembly Method:
Place one crepe onto a serving plate. Top the crepe with 1/8 cup (1oz) of the filling and spread with a spatula. Place the next crepe on top of the previous one and continue building layers until all crepes are used. Refrigerate until frosting has set, at least 6 hours (overnight is best).
Slice and serve with the topping of your choice.

Raspberry Sauce
This sweet and tangy raspberry sauce is the perfect topping for your crepe cake – or drizzle it over ice cream, pancakes, or even yogurt for a little holiday flair.
Ingredients:
½ cup granulated sugar
1 ½ Tbsp cornstarch
Pinch of nutmeg
Pinch of salt
½ cup water
4 oz raspberries
1 Tbsp lemon juice
Method:
In a sauce pan, combine sugar, cornstarch, nutmeg, and salt — mix well to avoid clumps.
Add water. Cook over medium heat until thickened and clear.
Stir in the raspberries and lemon juice.
Pass the sauce through a fine mesh strainer.
Serve over your dish of choice, or refrigerate until use.
